Some Cocktail Fun

Usually I cook with alcohol, but I do once in awhile dabble in making cocktails.
These two cocktails are fun and can be a conversation topic at your next party.

Smores Delight Cocktail

1 tbsp. Peanut butter
1 tbsp. Chocolate syrup
1/2 oz. Kahlua or coffee liqueur
1/2 oz. Dark rum
1/2 oz. Vodka
1 oz. Almond milk
Torched mini marshmallows for garnish

In a small pitcher or bowl, mix together peanut butter and chocolate syrup. Stir in the Kahlua until well blended. Stir in the rum and vodka, then add the almond milk. Fill a martini shaker with ice and add the mixture. Shake vigorously until well chilled. Drizzle into the martini glasses with chocolate syrup. Strain cocktail into the glasses. Put a few mini marshmallows on a skewer and toast with a torch, then place them over the prepared glass.

Chocolate Peppermint Cookie Cocktail

3/4 oz. Tequila
1 oz. Peppermint schnapps
3/4 oz. Godiva liqueur
1 1/2 oz. Cream

Rim martini glass with chocolate syrup and crushed peppermint candy. Shake ingredients in a shaker with ice and strain into martini glass.
