Keeping An Eye On The Pie.
This is a great pie recipe for kids and adults as well. It is SOOO easy, quick and very good! A definite pleaser, hope you think so too!
Peanut Butter Marshmallow Pie
graham cracker crust
1 c. marshmallow cream (see recipe below)
½ c. peanut butter (crunchy or smooth)
8 oz. package cream cheese
4 tsp. sugar or 4 tsp. artificial sweetener
½ pint whipping cream
½ c. milk
Blend peanut butter, marshmallow cream and cream cheese in bowl. Blend well.
Add sugar and whipping cream slowly as blending. Stir in milk. Blend well.
Pour mixture into pie crust. Freeze until pie is thickened. After pie has set for about 5-10 minutes, serve and enjoy!
Homemade Marshmallow Fluff/Cream
3 egg whites, room temperature
2 c. light corn syrup
½ tsp. salt
2 c. sifted powdered (confectioner's) sugar
1 tbsp. vanilla
In a large bowl of an electric mixer, add egg whites, corn syrup, and salt.
Using your electric mixer on high speed, mix for approximately 5 minutes or until the mixture is thick and volume has almost doubled.
On low speed, add powdered sugar and mix until well blended. Add vanilla extract just until well blended.
Your homemade marshmallow fluff/cream is now ready to use in your recipes. Use immediately, or refrigerate in a covered container for up to 2 weeks.
Makes a large quantity.
