An Old Classic With A Healthy Twist
I love a quick meal, especially one that yields leftovers to keep me stocked in chicken legs for the month. This is my version of that old classic shake and bake. All you do is toss the ingredients into a plastic bag, shake it up and then bake.
You can of course use this recipe with any cut of chicken but the drumsticks are a really good value and they are very flavorful. They also make great party foods because it comes with it’s own handle! You can serve them for the big game.
You can also change up the spices to change the taste. You can make it a little more spicy by adding in some smoked paprika instead of the sweet paprika and bump up the cayenne pepper a little. For another option you can serve it with different dipping sauces.
Gluten Free Shake and Bake Chicken
1 to 2 c. rice flour
¼ c. sweet paprika
½ tsp. red and black pepper
1 tsp. cumin
1 tsp. granulated garlic
1 tsp. toasted onion powder
1 tsp. Sea Salt
large package of chicken legs
Add all the ingredients into the bag, shake and then place onto a foil or parchment paper lined large cookie sheet. Place into a 375 preheated oven. Cook for 30 minutes or until the internal temperature of the chicken reaches 165.
