What’s better than Red Velvet cookies? A Red Velvet cookie with a kick.
These awesome Mexican Red Velvet chili cookies are flavored with chili powder, giving them an amazing flavor. Honestly, when I tried these the first time I was skeptical. But as with most Mexican food, the spiciness makes everything taste even better!
This is a very simple recipe to make. I was able to whip these up. For the most part, all you have to do is combine all the ingredients, shape the cookies, and bake them.
These chili red velvet cookies are great to serve after dinner as a special treat for your family, friends or dinner guests. It is up to you whether or not you mention the chili content before serving the cookies. What’s cool about the chili is that there is not enough of it in the cookies to make them spicy or fiery. However, there is just enough to complement the sweet flavor and give them a little zing.
Mexican Red Velvet Chili Cookies
1/3 c. unsweetened cocoa powder
¾ c. plus 2 tbsp. white sugar
¼ tsp. ancho chili powder
1 ¼ c. flour
¼ tsp. salt
2 tsp. cinnamon
½ c. softened butter
1 tsp. Red food coloring
Preheat the oven to 350.
Sift the cocoa, chili powder, salt and flour together. Beat the butter for a minute with an electric mixer, then add ¾ cup of the sugar and food coloring and beat for 3 minutes, scraping down the sides of the bowl as you go. Add the egg and beat for another minute. Stir in the flour mixture. Chill the dough for 45 minutes in the refrigerator. Use a rounded tablespoons to drop cookie dough on to ungreased cookie sheets.
Bake them for 6 minutes.
Turn them over and bake the other side for 5 minutes.
Let them cool for 10 minutes, and then sprinkle the remaining sugar and the cinnamon over the cookies.
