A Simple and Delicious Chicken Recipe

It is a fantastic, hearty recipe that will fill you up.  And it’s tart and sweet flavor goes very well with a spoonful of creamy risotto on the side. But it can also be served with a simple vegetable preparation like broccoli or asparagus.  I make this dish winter, spring, summer and fall - it’s that good.balsamic_chicken2

Balsamic Chicken

1 ½ tbsp. Olive Oil
¼ c. Pancetta, or a couple strips of bacon chopped
2 sprigs of fresh rosemary (for more flavor chop some of the rosemary leaves into the pan)
2 sprigs fresh thyme
2 cloves of garlic
2 chicken breasts (about 1 lb.)
¼ c. good Balsamic Vinegar
Salt and Pepper to taste
Over medium heat in a large skillet add the oil, bacon, herbs and garlic and brown the bacon, about 5 minutes.  Add the chicken and brown it well sprinkling the meat with salt and pepper, about 10 - 15 minutes.  Once the chicken is nearly cooked, add the vinegar and an equal part water to the pan.  Turn up the heat to help reduce the sauce.  Turn the heat back down to let the chicken cook until done.  Remove the chicken when fully cooked.  If the sauce in the pan is still thin turn the heat back up to continue reducing.  Spoon the sauce over the cooked chicken, garnish and serve.
