Orange Cheesecake with Chocolate Drizzle
1 ½ c. chocolate cookie crumbs
4 tbsp. butter, melted
1 envelope unflavored gelatin
½ c. orange juice
24 oz. cream cheese, softened
¾ c. sugar
1 c. whipping cream, whipped
2 tsp. grated orange peel
2 oz. bittersweet chocolate, coarsely chopped
1 tbsp. vegetable oil
Preheat oven to 350.
Combine cookie crumbs and butter. Press onto bottom of 9-inch springform pan and bake at 350 for 10 minutes. Cool.
Soften gelatin in orange juice; stir over low heat until dissolved.
Combine cream cheese and sugar. Gradually add gelatin mixture. Fold in whipped cream and orange peel.
Chill until firm, about 4 hours.
Just before serving - in a small microwavable bowl, microwave chocolate and oil uncovered on high 1 minute to 1 minute 30 seconds, stirring every 15 seconds, until melted.
Drizzle chocolate over cheesecake.
