Still Thinking Mardi Gras

There’s nothing more tastier, than a delicious bowl or two of coleslaw. So why not have Cajun Coleslaw? I made this last year for Mardi Gras and everyone enjoyed it very much, so much that I had to make a second batch.

Cajun Coleslaw

5 tbsp. Mayonnaise, heaping
1 tsp. Hot sauce
2 tbsp. Yellow mustard, heaping
2 tbsp. Ketchup
2 tbsp. Olive oil
1 tbsp. Wine vinegar
1 tsp. Garlic salt
1 tbsp. Worcestershire
Juice of 1 lemon
3 tsp. Salt, to taste
4 Bell peppers, sliced
2 medium onions, shredded
1 large Cabbage, shredded
Combine mayonnaise and mustard in a large bowl. Add olive oil slowing, while whisking as you pour. Whisk until the mixture is as thick as the mayonnaise when you started. Add hot sauce while continuing to whisk, then add ketchup, salt and garlic salt while still whisking the mixture. Add wine vinegar and lemon juice as you continue whisking. Taste for salt and pepper. In a salad bowl, mix together the peppers, onions and cabbage, pour the sauce mixture over the cabbage and toss well.
