One would never thought that peanut butter has much more uses, than just sandwiches and desserts or candies.
I recently made this dish for a client and now they want it permanently on their menu, so that they can have it twice a month.
Peanut Butter Chicken
½ c. peanut butter
1 tsp. salt or to taste
½ tsp. ground pepper
¼ c. milk
¾ c. bread crumbs
1 Whole chicken cut in serving pieces
¼ c. oil
Preheat oven to 350.
Beat egg and peanut butter with salt, pepper and milk.
Put bread crumbs on a plate. Dip chicken in peanut butter mixture and coat with breadcrumbs.
Arrange chicken in single layer in baking pan. Pour oil over chicken. Bake for 1 hour in oven, or until cooked through.
