Barbecue Chicken, Cuban Style!



Who says you have to go to Cuba, to experience their delightful meals? For all that matters, who says you have to leave the country to enjoy any international cuisines? If you can gain an insight as to the primary preparation of any cuisine, then all you need to do is let your imagination run wild! Like I said in an earlier blog, let your imagination do the cooking, for no recipe is ever written in stone. I wanted to do a Barbecue Chicken, but I wanted to do it with a touch of flair. Hence the Cuban name "Pollo a la Barbacoa" It's a simple recipe, and please don't be afraid to kick it up a notch or two if your imagination runs wild.

Pollo a la Barbacoa

Main Ingredients:
1 Chicken, cut up
1/2 c. Flour
1 tsp. Paprika
1 tsp. Salt
3/4 tsp. Black pepper
1/4 lb. Butter

Sauce:
1 c. Ketchup
1/2 c. Dry wine
1/3 c. Water
2 tbsp. Lemon juice
1 small onion, minced
1 tbsp. Soy sauce
2 tbsp. Butter
1 tbsp. Sugar
Preheat oven to 325.
Marinate chicken for 1 hour in refrigerator with crushed garlic and 1 1/2 cups of orange juice.
Mix flour, salt, pepper and paprika until well blended. Roll chicken in the mixture and brown in hot butter. Transfer cooked chicken into a baking dish.
Combine ingredients for the sauce in a saucepan and bring to a boil. Pour mixture over chicken. Cover and bake for about 1 1/2 hours.
